Somehow food always tastes better when it is served in pretty dishes. We picked up a set of these split casserole dishes from a vintage store in Minneapolis. I've been using the summer pattern even though the weather isn't sure its ready. The best thing about these - they have a glass lid so I cook and serve in the same dish. Meat on one side, roast veggies on the other.
The basic recipe is: marinated meat on one side (oil, vinegar, water & some spices) and veggies (tossed with oil, salt, pepper & herbs) on the other.
Cooking with them is so easy, they have moved up into my top 5 kitchen gadgets. Which are:
- Crockpot
- Food processor
- Tea kettle (this one)
- Covered casserole dishes
- Rice cooker/steamer
Here's another shot of the dish doing its job:
